This recipe was given to me by a good friend. The instructions did not give exact amounts of each ingredient, so it’s a little different every time, but always very tasty.
Instructions
In a blender:
Few handfuls spinach and (kale optional)
Couple cloves garlic
Pickled jalapeños and their pickle water a splash
Cheese like Parmesan or pecorino
Some nuts lkke cashew or hazelnut or some such
Salt pepper
Boil pasta
Add some pasta water to that blend
Crisp some guanchale in pan
Add the sauce and bring to simmer
Add pasta
Mix and serve with more cheese and chilli flakes and eat
