The green pasta

This recipe was given to me by a good friend. The instructions did not give exact amounts of each ingredient, so it's a little different every time, but always very tasty.

Ingredients

For the sauce (in a blender)

  • Few handfuls spinach and kale
  • Couple cloves garlic
  • Pickled jalapeños and a splash of the pickle water
  • Cheese like Parmesan or pecorino
  • Some nuts like cashew or hazelnut
  • Salt and pepper

For the pasta

  • Pasta of your choice
  • Guanciale (or bacon/pancetta)
  • Extra cheese for serving
  • Chili flakes

Steps

  1. Boil pasta according to package directions.
  2. While pasta cooks, add spinach, garlic, pickled jalapeños with a splash of pickle water, cheese, nuts, salt, and pepper to a blender. Blend until smooth.
  3. Crisp guanciale in a pan over medium heat.
  4. Add some pasta water to the blended sauce to thin it out.
  5. Add the sauce to the pan with the guanciale and bring to a simmer.
  6. Drain pasta and add to the sauce. Mix well.
  7. Serve with more cheese and chili flakes.
