This recipe was given to me by a good friend. The instructions did not give exact amounts of each ingredient, so it's a little different every time, but always very tasty.
Ingredients
For the sauce (in a blender)
- Few handfuls spinach and kale
- Couple cloves garlic
- Pickled jalapeños and a splash of the pickle water
- Cheese like Parmesan or pecorino
- Some nuts like cashew or hazelnut
- Salt and pepper
For the pasta
- Pasta of your choice
- Guanciale (or bacon/pancetta)
- Extra cheese for serving
- Chili flakes
Steps
- Boil pasta according to package directions.
- While pasta cooks, add spinach, garlic, pickled jalapeños with a splash of pickle water, cheese, nuts, salt, and pepper to a blender. Blend until smooth.
- Crisp guanciale in a pan over medium heat.
- Add some pasta water to the blended sauce to thin it out.
- Add the sauce to the pan with the guanciale and bring to a simmer.
- Drain pasta and add to the sauce. Mix well.
- Serve with more cheese and chili flakes.
